i. Biography
Production coordination and purchasing in a culinary school is not separate from kitchen training. It governs product flow, timing, mise en place, and the discipline that teaching kitchens require before service begins. In 2015, that work at Le Cordon Bleu Malaysia was held by Chua Tor Aik, who also completed the Diplôme de Commis Cuisinier there. His own description keeps the point practical: “I am glad i did my Diplôme de Commis Cuisinier with Le Cordon Bleu Malaysia as i was professionally trained and molded by the chefs, to prepare for the international kitchen.”
The Climb
Classical formation, procurement, bistro work, competition practice, and Copenhagen service form the working sequence. Le Cordon Bleu Malaysia supplied the school base, where Chua Tor Aik worked as production coordinator and purchasing officer. The next stages added work as chef at French bistro in Kuala Lumpur, membership in the Malaysian team for international culinary competitions, and service at Noma in Copenhagen, Denmark, first as an intern and later as chef. The executive-chef role at Zén Singapore now sits on that sequence. The work carries school discipline, purchasing fluency, competition pressure, bistro practice, and Noma service into a dining room built on exacting standards.
Today
The cooking is planned around French technique, Nordic food philosophy, and Malaysian flavours. That frame is technical rather than decorative. French technique supplies structure and control. Nordic food philosophy informs restraint and ingredient thinking. Malaysian flavours keep the palate connected outside the European line. In Chua Tor Aik’s work, the lineage is visible through Le Cordon Bleu Malaysia, Copenhagen, and a cuisine shaped by French technique, Nordic food philosophy, and Malaysian flavours.

Recognition
Recognition attaches to continuity at the dining-room level and to competition practice. Zén retained 3-star Michelin recognition under Chua Tor Aik's leadership (2024), and his record also includes Food and Hotel Asia Culinary Challenge medals with the Malaysian team (2014).
