Pastry training here is built on rigor first: Thierry Mulhaupt set the early foundation for Claire Heitzler, before she moved through kitchens where consistency and precision were non-negotiable. At Troisgros in Roanne, she started as commis patisserie chef; at Georges Blanc in Vonnas, she worked as Pastry Chef; and at Jean-Paul Abadie in Lorient, she added another demanding house to a line of experience shaped by exacting standards. International pastry work widened the frame without changing the discipline. In 2003, Claire Heitzler became Pastry Chef at L’Oranger in London, then in 2004 moved to Beige Alain Ducasse Tokyo as Pastry Chef. She later served as Pastry Chef at Park Hyatt in Dubai, before returning to Paris in 2009 as Pastry Chef at Ritz Hotel in Paris. In 2010, she became head Pastry Chef at Lasserre in Paris, and in 2015 she took on the role of director of creation at Ladurée, a post she held until 2018. Today, Claire is owner of Claire Heitzler & Producteurs.
Where They Are Now
Patisserie remains the center of Claire Heitzler’s work at Claire Heitzler & Producteurs in Levallois-Perret. The practice is built less on display than on process: image, drawing, revision, and a refusal to stop before the result matches the idea. In her own words, she describes desserts as beginning in imagination and taking shape through repeated refinement until she is satisfied with the final work. That method carries the weight of the earlier rooms without losing the focus of the present studio. Claire Heitzler & Producteurs suggests production as much as authorship, and her approach keeps the emphasis on making, testing, and adjusting. The work begins privately, then is worked and reworked until it holds.
