i. Biography
Claudia Cabrera’s bar work is built less on a single breakthrough than on the discipline of learning in stages: books, questions, repetition, and time on the floor. At Kaito Del Valle in Mexico City, where she is co-founder and director of the bar, that approach reads clearly. She has said she began by buying books, researching, and going to bartenders to learn cocktail work when information was harder to find. That habit of searching out knowledge, rather than waiting for it to arrive, sits at the center of her practice.
The Path
Training at Centro de Capacitaciones de Casa Domeq and Metropolitan Bartending School gave structure to a craft she was already building through observation and service. From there, the work moved through front-of-house roles at Cluny and Los Danzantes, where the lesson was not only hospitality but timing: how to read a room, how to pace a table, how to keep service moving without breaking its shape. Behind the bar at Corazón de Maguey in Mexico City and Joe Jack's Fish Shack in Vallarta, the work became more technical and more immediate. Those stations sharpened the kind of bartending that depends on attention, control, and consistent study. Claudia Cabrera’s progress through those rooms was cumulative; each service added reference points, and each shift added another layer to the way she works. That experience widened further through cocktail programs at Grupo Toscano in Mexico City, then through consultant roles in mixology at Deigo Sushi and Bolichera 21. Moving from execution to consultation changed the scale of the work: not just making drinks, but helping shape how a program is built and how a bar identifies itself. In that sense, the craft extends beyond the glass and into the structure around it. Today, Claudia Cabrera is co-founder and director of the bar at Kaito Del Valle, bars director of Crey Group, brand ambassador of Fratelli Branca Mexico, and member, philanthropy and Development Committee of Tales of the Cocktail. The range of those roles points to a practice that stays close to service while also operating at the level of direction, representation, and industry work.
The Work Today
At Kaito Del Valle in Mexico City, the bar is shaped by Claudia Cabrera as both a working system and a point of view. Her role asks for decisions that are practical and immediate, but also for the discipline to keep standards consistent from one service to the next. The work carries forward the same pattern that defined the earlier stages of her career: learn, refine, apply, repeat.
Signature
Claudia Cabrera’s signature dishes include Saigon Shrub, Five Spice, Fassionola, Grapefruit / Smoked Pepper, and Finger Lime / Calamondin. Read together, they point to a bar language built on brightness, spice, and balance. The pairings suggest a hand that works with contrast: citrus against smoke, lift against depth, and flavor combinations that unfold rather than announce themselves all at once.
