The Climb
Pastry training in New York provided the technical base: Peter Kump’s New York Cooking School is the formal education recorded for Claudia Fleming, and it set the footing for a career built inside restaurant service rather than apart from it. Dining-room work came before production work. At Union Square Cafe, Claudia Fleming worked as a waitress, learning restaurant pace and guest-facing timing from the floor. The move to Tribeca Grill as a Pastry Assistant put that service literacy into the pastry station, where repetition, texture, and balance became daily work. Opening a pastry program requires both menu identity and operational discipline. In 1994, Gramercy Tavern brought Claudia Fleming in as Opening Pastry Chef, a role she held through 2002.
