i. Biography
From Zambia to Bournemouth College, Colin McGurran’s career has moved through kitchens, countries and forms of service without settling into a single pattern. The throughline is technical discipline: work shaped by professional standards, by the pace of service, and by an interest in what hospitality can hold when it is treated as craft rather than routine.
The Path
Training at Bournemouth College gave Colin McGurran the base for a career that quickly moved beyond the classroom. His first post was at Domaines Haut De Loir in France, where the pressure of service put precision and timing at the centre of the work. He then became banqueting manager at UAE royal family in Abu Dhabi, a role that placed him in a more exacting register of hospitality and demanded close attention to detail. By 2001, Colin had become owner at Woolpack Country Inn in England, shifting from employee to custodian of a house with its own standards and identity. Today he is owner of Winteringham Fields, where training, travel, discipline and a close relationship with produce come together in a practice that is both grounded and broad in outlook.
The Work
At Winteringham Fields, Colin McGurran frames the restaurant as more than a service model. “Winteringham Fields to me is about an experience; we are chefs, we grow, we rear animals, we serve, we look after customers, that's really what we do.” The point is not only the meal, but the full chain of work behind it: growing, rearing, preparing and serving as one connected practice. That approach gives the cooking a clear link to landscape and season. The kitchen is presented as a place of observation and translation, where produce is handled with care and the work of the restaurant extends beyond the pass. In that model, service is not separate from the kitchen; it is part of the same discipline.
Signature
Colin's signature dishes include Quail in the Woods and Dickin Medal dessert. The pair shows range across the menu: one dish grounded in the language of the land, the other carrying a more defined dessert identity. Together they point to a kitchen that works across restraint and finish.
In Their Words “The menu that we have is a tasting menu which means it allows customers to enjoy the journey that we're going on ourselves.” These lines place creativity in close contact with observation. Nature is the source material; the tasting menu is the format that carries that thinking to the table, allowing diners to move through the meal in step with the kitchen’s own sequence.
Acclaim
Colin's honors include Great British Menu dessert winner (2014), Great British Menu starter winner (2012), five AA stars, and three AA rosettes. The awards speak to different parts of the work: dessert, starter, consistency and the sustained standard required to keep a kitchen in recognition over time.
