The Making
Production management is useful groundwork for distilling because it trains the maker to think in systems: inputs, process control, consistency, and accountability across stages. At the University of Limerick, Colum Egan studied that discipline before applying it to whiskey production. Irish whiskey distilling depends on continuity as much as change, especially inside a house with long-established methods. In 2002, Colum Egan became Master Distiller at the Old Bushmills Distillery in County Antrim, Northern Ireland, taking on work tied to one of the world's oldest distilleries. “We are not the best because we are the oldest, we are the oldest because we are the best.” Colum has said.
Present Day
Triple-distilled whiskey requires close control from distillation through maturation, with house character protected across repeated production decisions. Since 2002, Colum Egan has served as Master Distiller there, overseeing the distillation and maturation process for its style. New whiskey development in an old distillery is not a break from tradition; it is a test of how far a house style can move while remaining legible. Under Colum Egan, the distillery has developed new whiskeys alongside its established production, and the expansion of the Causeway Distillery is part of that forward capacity. Energy efficiency and sustainability now sit inside the working brief of modern distilling, not outside it.
