The Path
Instruction became part of the craft in 2019, when Cory Barrett took on pastry and baking teaching at Kalamazoo Valley Community College. The classroom asked for the same habits the kitchen demands: repetition, exactness, and attention to process. In 2023, ownership at Barrett's Quality Eats shifted the work from execution inside another business to responsibility for the business itself, with the same technical base still doing the heavy lifting.
