The Essentials Scottsdale Culinary Institute in 2002 gave Oppold the base to sharpen technique into method. By 2015, as Executive Chef at Atlas Bistro in Scottsdale, United States, that training had become a working command of timing, sequencing, and the demands of carrying a dining experience from first course to last. His own description of the specialty is direct: multi-course dining, with the same logic applied to six courses in guests’ homes. Oppold has described the business as moving “from a meal kit delivery service to a restaurant on wheels,” a shift in format that keeps the dining concept intact while changing the setting.
