Training at University of Bristol gave Cosmo Sterck the starting point, but the craft was built in London kitchens: chef at St John in London, then chef at Brawn in London. Those rooms demand different kinds of control, but both measure a cook by the same things — prep, timing, and the ability to keep pace when service tightens. Later, as head chef at Rubedo in Stoke Newington, he took on the full shape of a kitchen, where practical decisions and creative ones have to land together.
