i. Biography
From a son watching his father closely at Sushi Yuu to Executive Chef of Sushiyuu in Tokyo, Japan, Daisuke Shimazaki’s arc has moved through attention, repetition, and a gradual claim on his own style. As the second-generation owner of Sushi Yuu, he carries Edomae discipline forward through warm shari, direct ties to Tokyo Bay seafood, and an omakase that changes pace from seasonal otsumami to nigiri.
Beginnings
Shimazaki’s education began at close range: he learned by watching his father closely at Sushi Yuu in Tokyo, Japan. The lesson was not framed as a school credential or an outside apprenticeship; it was the daily study of a working Edomae sushi restaurant, absorbed until he eventually established his own style. Over time, that style came to center on Classic Edomae nigirizushi served in an inviting and comfortable environment.
The Rise
At the center of his cooking is Authentic Edomae sushi made with traditional vinegared rice and seafood procured directly from Tokyo Bay. His shari is gently warm and lightly seasoned, built to support the fish rather than dominate it. Each morning, he visits Toyosu Market to ensure the tuna served at the restaurant is a textured delight. The omakase begins with seasonal otsumami before moving into nigiri, a sequence that lets the meal gather speed before rice and fish become the focus. Kaiware kombujime nigiri takes three days with Hokkaido kelp and katsuobushi, and is remembered as one of the restaurant’s most memorable pieces for unexpected depth and a clean lingering finish. Kohada sits even closer to the chef: "My favorite is Kohada (it’s similar to herring)." Near the end of the course, anago with tsume sauce appears as a familiar favorite. Recognition followed in named rankings. In 2023, Opinionated About Dining Japan listed Sushiyuu as Recommended. In 2024, it ranked #452, and in 2025, #520.
Today
Today, his work combines the responsibilities named by his titles: Executive Chef of Sushiyuu and second-generation owner of Sushi Yuu. The rhythm remains concrete rather than declarative: market visit, seafood selection, shari temperature, seasoning, and an omakase shaped from otsumami into nigiri. For guests, part of the draw is human contact as much as technique. He describes the reward of the job this way: "Meet people from all over the world and when I see their satisfied faces after they ate my dish - those happy faces make me happy as well."
