Beverage Alcohol Resource partner and faculty member Dale DeGroff works in the register of modern American bartending: service discipline, historical recall, measured technique, and the public argument that the bar belongs in the same craft conversation as the kitchen. Born September 21, 1948, the American bartender brought Rhode Island beginnings into a career shaped less by a single named apprenticeship than by the repeated education of service: pour after pour, shift after shift, guest after guest. Hotel bartending gave that education a formal frame. At the Beverly Hills Hotel, DeGroff worked inside a style of hospitality where timing, composure, and consistency matter as much as recipe knowledge. Later rooms and institutions—Charley O’s, Aurora, Rainbow Room, the Museum of the American Cocktail, and Beverage Alcohol Resource—placed that working method inside the broader return of the American Cocktail, then carried it into education, preservation, and advocacy for the trade.
