The Path
Syracuse University was Dan Kluger’s formal start, but the practical education came in New York City kitchens, where timing, discipline, and instinct have to hold up service after service. In 1995, he joined Union Square Cafe in New York City as a prep cook and opening team member, working at the point where a restaurant is assembled before it fully reads as one. By 1999, he had moved to Tabla Restaurant in New York City as its first Head Chef, taking on both the operational burden and the authorship that comes with defining a kitchen’s direction. The next stretch of his career ran through several of the city’s important rooms. He served as executive chef at The Core Club in New York City and chef at ABC Kitchen in New York City, roles that sharpened a practice already oriented toward seasonality, produce, and the pace of urban dining. In 2016, he became chef and owner at Loring Place in New York City. That change marked a different kind of responsibility: not only cooking, but setting the menu, the rhythm, and the point of view.
