Portrait of Daniel Hernandez
i. Biography
The Path
Behind the bar, Daniel Hernandez’s first years in one of Aruba's best seafood restaurant in Aruba (2008–2012) were built on timing, composure, and reading service before it cracked under pressure. Bartending in that setting meant more than pouring drinks; it meant holding pace, managing expectations, and keeping the room moving with clean execution. On the line, the work tightened. As Chef di partie at one of Aruba's best seafood restaurant in Aruba (2012–2014), Daniel Hernandez moved from front-of-house rhythm to the sharper demands of the pass, where plates had to leave the kitchen exact, composed, and on cue.
The shift from bar to line marked a deeper immersion in kitchen discipline, where repetition becomes skill and skill becomes judgment. That progression continued at the local Restaurant of the Company in Aruba (2014–2017), where Daniel Hernandez worked as chef and took on broader responsibility for how service was shaped. The role widened the scope of the craft: not only executing the work, but helping direct it, with the accumulated habits of the bar and the line feeding into a more complete kitchen practice.
Alongside restaurant work, Daniel Hernandez built his own catering company in Aruba, which he started in 2013 and has continued since. In 2020, he added private chef service in Aruba to that independent practice, bringing the same technical range into a more personal format. He is also Head Chef of Nos club huis, a role that extends that layered experience into kitchen leadership. Taken together, Daniel Hernandez’s career is a study in progression through the trade: bartender, Chef di partie, chef, operator, private chef, Head Chef.
Each step adds another angle on the same craft, from service control to line discipline to the broader responsibility of cooking for different settings. The through line is consistency, and the discipline of staying close to the work while taking on more of it.
