Dario Pieropan works the Pieropan estate in Soave, Italy, inside a family name long tied to the region’s most poised white wines. The Climb
Training at the University of Udine (2004) and early cellar work as assistant enologist at Poliziano and Isole e Olena (until 2004) gave Dario Pieropan the basic discipline of the trade: texture, balance, and patience judged in practice rather than theory.
