Portrait of David Campbell
i. Biography
David Campbell is a Canadian chef whose career has moved from formal training in Toronto to senior roles in kitchens and hospitality groups across multiple continents. He is now Executive Pastry Chef at Hyatt Regency Lake Tahoe Resort, Spa and Casino in Incline Village, Nevada, where he brings a global pastry background to a setting known for refined hospitality and a sense of occasion. He has described the role as an opportunity to create desserts that celebrate both artistry and flavor, and to craft memorable moments through chocolate and other sweet creations. Campbell trained at George Brown College in Toronto, where the foundations of his craft were set before he moved into the kitchen circuit with increasing authority. His early career included serving as Head Chef at Grand Hyatt Steakhouse, a role that placed him in a demanding professional rhythm and helped establish the discipline and confidence that would define his later work. He later became owner and operator at The Book Kitchen in Sydney's Surry Hills, a step that broadened both his cooking and his responsibility across the business. His trajectory has continued to expand, with Campbell building a portfolio that reflects range and momentum. He is owner and operator of Wharf Rd Restaurant and owner and operator of Hungry Duck, while also serving as Head Chef of The Dower House. Alongside these roles, he has taken on leadership positions that speak to the breadth of his experience, including chairman of Rare Restaurants and chair of Ole and Steen. Taken together, Campbell’s career suggests a chef equally at home in the intensity of service and the careful, architectural work of pastry. His progression from training to leadership, from chef to operator, and from savory kitchens to sweet precision, reads as a steady expansion rather than an abrupt reinvention. Each stage has added another layer to his approach, whether in the operational demands of ownership or the expressive possibilities of dessert.
