Training and Lineage
Haute cuisine apprenticeship teaches order before expression: repetition, restraint, sauce work, produce handling, and service discipline. Early in his career, David Rathgeber entered that register as a culinary apprentice under Alain Ducasse at Alain Ducasse, where precision functioned as the base condition of the work rather than a decorative finish. Classic French bistro cooking asks for a different kind of control: generosity without weight, familiarity without slackness, and comfort held in shape by technique. As Executive Chef of L'Assiette, Rathgeber applies the discipline of a grand-kitchen training to the Paris bistro table, where the cooking reads direct, savory, and built through heat rather than arrangement.
The Work Today
“I like melded flavors that wouldn’t exist without real cooking, and this is what I do at L’Assiette.” Melded flavor is a technical position. It favors contact, heat, time, and seasoning over isolated components placed side by side. At L’Assiette, David Rathgeber’s cooking works in that register: juices take on seasoning, textures move toward softness or crispness, and ingredients are pushed toward a shared depth rather than kept separate for presentation. Cassoulet is the restaurant’s clearest statement of that method. Paris by Mouth says L’Assiette is rightly famous for it and calls it the best cassoulet in Paris. The recognition fits the preparation: cassoulet cannot be produced by assembly alone; it depends on slow integration, depth, and the kind of richness that comes from cooking ingredients into one another.
