i. Biography
In Reims, Champagne is assembled by parcel, by variety, and by vintage. Each component is held apart until blending gives the wine its final architecture. That way of working—order, separation, memory, and timing—frames Didier Mariotti’s career in the houses that define the region.
Coming Up
The cellar work that formed Didier Mariotti moved through a sequence of roles where consistency and blend discipline matter more than display. At Champagne Nicolas Feuillatte, he was Chef de Cercle from 1999–2003, working close to the day-to-day pace of Champagne production. He then became adjoint au Chef de Caves at Champagne GH Mumm from 2003–2006, taking on a role further inside the decisions that shape house style. His years as Chef de Caves at Champagne GH Mumm from 2006–2019 were the central stretch of that path. In that position, Didier Mariotti worked at the point where continuity has to be preserved without freezing the wine in place. From 2009–2019, he also served as Directeur Vins at GH Mumm and Perrier-Jouët, extending that remit across two houses and broadening the scope of his cellar responsibilities. In 2019, he became Chef de Caves of Veuve Clicquot Ponsardin. The role asks for technical control and for a steady reading of house style over time—keeping the past present in the glass without letting it turn rigid.
Where They Are Now
At Veuve Clicquot Ponsardin, the work centres on the cuvées that carry the house signature. Brut Yellow Label, described as one of the house’s signature cuvées and built around reserve wines, sits alongside Yellow Label, the house’s trademark Champagne built around reserve wines, and La Grande Dame, another of the house’s signature cuvées. These wines depend on selection, reserve material, and restraint in blending; the style has to remain legible from one release to the next.
