The Climb
At Dão Sul in 2008, Diogo Rocha took on the Executive Chef role that set the terms of his early career: structure, precision, and a clear pace of advancement. The position marked an early point where his ambition and his method were already working in tandem. Mesa de Lemos became the next fixed point in 2009, and it has remained the kitchen most closely associated with Rocha’s work. In Passos de Silgueiros, Viseu, Portugal, the restaurant has given his cooking a stable setting in which to develop with consistency rather than reinvention, and his approach there has stayed attentive to detail and to the daily discipline of service. Also in 2009, Rocha joined Escola Superior de Turismo as a Faculty Member. Teaching alongside service work places method at the center of his practice: standards, repetition, and the passing on of technique. That combination shows a chef working not just in the kitchen, but in the maintenance of the craft itself.
Today
At Mesa de Lemos, Diogo Rocha continues in the head chef role with the same measured register that has defined his path since 2009. His faculty work at Escola Superior de Turismo keeps that practice connected to instruction, making the kitchen and the classroom part of the same professional frame: one built on consistency, exactness, and sustained attention to craft.
