The Climb
The first professional kitchen often teaches speed, endurance, and where a brigade’s real tempo lives, and Dmitri Magi started there as a dishwasher and kitchen helper. From that base, he moved into the role of chef in Estonia, a stretch that would have demanded consistency as much as technical control. He then took on the role of head of kitchen at popular restaurant in Latvia, a step that marked a shift from execution to directing service. He became chef at Noma in Copenhagen, then moved to Gramercy Tavern in New York and to the kitchen team at Eleven Madison Park in New York.
