Coming Up
The steady work of service and repetition is what sharpened Donovan Cooke’s early kitchen years. At The Waterside Inn in London, England, he worked as Chef de partie from 1980–1989, a long stretch that sits squarely in the discipline of line work. He then moved to Harvey's in London, England, where he became Head Chef from 1991–1995, taking on the pace and responsibility that come with directing a kitchen day after day. The move to Melbourne, Australia, brought that same experience into new rooms. In 1996, Cooke became co-creator at Est Est Est, then in 2010 he took on the role of Executive Chef and partner at The Atlantic in Melbourne, Australia. Those positions extended a career built through demanding kitchens and sustained collaboration. Cooke was later chef of Ryne.
Where They Are Now
Ryne in Fitzroy North was where Cooke held the chef/patron role, adding one more city to a career that moved between London, Hong Kong and Melbourne kitchens. The through-line is less about reinvention than retention: cooking that stayed legible across different service rooms, and a working memory that held what school did not.
Signature
Donovan's signature dishes include confit salmon dish, The Atlantic at Home, and Marriages. The names point to a cook working in plain terms: dishes identified by function, place and intent, with no excess in the naming and no need for it in the kitchen language behind them.
