The Climb
Early in his career, Doug Flicker moved through a sequence of Minneapolis kitchens that shows how craft can be built by repetition, not speed. At D’Amico Cucina, Loring Cafe, Auriga, and later as chef and co-owner at Piccolo in South Minneapolis, each role added another measure of judgment and control. The progression reads as accumulation: technique sharpened, confidence tightened, and a working sense of place took hold through the rooms themselves. Since 2017, Bull’s Horn has held that accumulation in one place. As chef and owner, Doug Flicker has been responsible for both the food and the business, a combination that puts kitchen discipline and operational control in the same hands. It is a role shaped by years of moving through the city’s restaurant landscape and by the practical habits that come from staying with the work long enough to make each step count.
Today
Since 2017, Doug has been chef and owner of Bull’s Horn in South Minneapolis. The title names the job plainly: cooking, directing, and carrying the restaurant’s course in the same role. That pairing of kitchen and ownership gives the work a directness that comes from experience rather than posture.
Signature
Doug's signature dishes include pickled pigs feet with truffles and soft scrambled eggs, Bull's Horn Burgers, and insane croque madame. The range says a lot about the kitchen behind them: one plate pushes into surprise, another leans on the structure of a burger, and another turns a familiar dish up to a high register of comfort. Put together, they point to cooking that is playful, exacting, and comfortable working across forms.
In Their Words “I kind of think that was a start.”
Recognition
Doug's public voice is plain and direct, and that short line carries the same unforced clarity that seems to mark his career: “I kind of think that was a start.” The understatement leaves room for the work that came before and after, while also fixing 2017 as the clear turning point, when he took on Bull’s Horn and made it the center of his current practice.
