The Path

Training at Universidad del Pacífico gave Edmond Borit the discipline that now underpins his work in wine. The value of that early education shows up in the way the project is shaped: ordered, deliberate, and responsive to the conditions around it. As founder and director of Bodega Sacromonte, Borit occupies the role that connects the original brief to the day-to-day direction of the estate.

The Work Today

At Bodega Sacromonte in Maldonado, the emphasis under Borit is on keeping the language close to the land. The project is not presented as decoration; it is presented as a reading of place, with the estate’s own conditions setting the terms. Borit states it plainly: "We want nature to be the protagonist at Sacromonte." That line defines the approach. Nature is not treated as backdrop, but as the central reference for identity at Sacromonte. The work stays restrained in tone, letting the surrounding environment carry meaning rather than adding excess around it. Orange Rosé gives that approach a public form, appearing beyond the winery and onto the table at La Bodeguita in Carrasco, Montevideo, Uruguay, with langostino al panko with cevichada sauce. The pairing is specific in the way trade work often is: a named wine, a named dish, and a named service setting. It shows a wine conceived not only for production, but for movement into service and into the wider life of the city.

Signature

Edmond's signature wines include Orange Rosé, Cabernet Sauvignon, Tannat 2020, and Tannat concrete-aged. Each name points to a different register of the project: brightness, structure, vintage, and technique, all held under the same direction at Bodega Sacromonte.
