Training and Lineage
Formal hotel-school discipline and family-restaurant apprenticeship sit on different sides of the same trade education. For Elena Arzak, the Hotel school in Lucerne supplied the professional foundation, while the Arzak kitchen in San Sebastián, Spain, supplied the Basque working context: repetition, service rhythm, and the daily handling of a regional repertoire inside a family restaurant. Cross-kitchen training added reference points beyond San Sebastián without replacing the Basque base. In 1989, Elena Arzak worked at Le Gavroche in London, UK, gaining exposure to the techniques and working assumptions of French cuisine. Later posts at La Maison Troisgros, Le Louis XV, Restaurant Pierre Gagnaire, and elBulli broadened that frame through kitchens associated with distinct approaches to modern restaurant cooking. Contemporary Basque cuisine at Arzak is practiced as continuity under pressure: inherited material, current technique, and a dining room that expects both memory and movement. As Joint Head Chef at Arzak, Elena Arzak works in the same San Sebastián house where that lineage was formed, applying outside experience to a local kitchen rather than treating tradition as display. “We respect the heritage of our culture; so what is valid from the past, we use for the future.” Elena has said.

In her current role as Joint Head Chef at Arzak, Elena Arzak leads cooking that uses the restaurant’s inherited language while allowing for new methods, combinations, and presentation choices developed with the team. Since 2025, Elena Arzak has served as Honorary President of Judges for the Roux Scholarship, a role tied to assessment, standards, and the development of aspiring chefs within a competitive professional framework.
