The Path
Hospitality comes into view here as a craft built through floor work, timing, and management rather than through a single break. Emil Oliva trained at St. Philip’s College, then moved into the dining room at Costa Pacifica in San Antonio, Texas, where front-of-house work from 2012 put him inside the pace of service and the mechanics of a room in motion. In that same year, a management role added oversight to the daily rhythm, extending the work from guest-facing service to the larger responsibility of keeping the operation moving cleanly. That combination of service and management still reads in the way Emil Oliva approaches the room: measured, attentive, and grounded in identity. Since 2023, he has been chef-owner of Leche de Tigre Cebicheria Peruana, a role that binds kitchen and dining room together.
