In Megève, the cooking is built from altitude before it is built from garnish. The Path
Formal training at CFA of Laon (1984) gave Emmanuel Renaut the technical base before the cooking narrowed toward Megève and the French Alps. The later language of nature, instinct and restraint rests on that earlier formation. He went on to work as team member at Hôtel Le Lotti in Paris, first cooking assistant at Hôtel de Crillon in Paris, sous-chef at Auberge de l'Eridan in Veyrier-du-Lac, chef at Yves Thuriès, and head chef at Claridge's in London.
