i. Biography
Erling Wu-Bower’s work reads like a Chicago line cook’s education pushed into leadership: University of Notre Dame gave him the philosophy background, and the kitchens gave him the operating language. The combination matters here. In the room, that kind of training shows up as structure, argument, and attention to how a plate carries meaning as well as flavor. The path through Chicago and beyond is the real syllabus. At avec, The Publican, Nico Osteria, The Outpost, Green Dolphin Street, Cetrella in Half Moon Bay, and Quince in San Francisco, Erling Wu-Bower moved through roles that demanded different tempos and levels of control. That range tells you as much about the craft as the title list does: chef work is repetition, adaptation, and the ability to keep a point of view while stepping into a new kitchen grammar. By 2018, Pacific Standard Time added another Chicago point on the map, and the present title at Maxwells Trading follows that same progression into partnership-level responsibility. At Maxwells Trading in Chicago, the current title is Executive Chef/partner, with 2025 also identifying Wu-Bower as chef-partner. Wu-Bower has put the philosophy bluntly: “I’m so involved in the creative process of the kitchen that I’m satiated.” The line fits a kitchen that is less about spectacle than about sustained involvement in the work. “Fusion doesn’t research. Fusion doesn’t appreciate heritage.
