Where They Are Now

At Bessem Restaurant in Mandelieu-La-Napoule, the work is described as gastronomic cuisine based on seasonal, market-driven ingredients. That brief is clear: the menu reads from the market first, then from technique. In Ben Abdallah’s case, the present kitchen sits on the same foundation as the earlier one—rigor, precision, and restraint—but it uses those tools to let freshness and the day’s produce do more of the talking. Running a room under his own name also changes the job. The chef is no longer only executing a brief for another house; the authorship now sits with Bessem Ben Abdallah, and that shifts how the dining room, the menu, and the hospitality are read. Bessem Restaurant becomes the current site of that authorship, and the career behind it remains visible in the way the work is framed: composed, direct, and built from accumulated practice rather than theatrics.
