The Climb
Food as a cultural carrier is the organizing idea in Esther Choi’s work. She treats cuisine as more than fuel: as a record of memory, and as a way to hold “the history, social customs, language, geography and arts traditions” that make a place legible on the plate. In her account of lineage, the point is not romance but transmission — “something passed from generation to generation – in my case from my grandmother to me” — and that inheritance sits at the center of her practice as an American chef/owner. Before Esther Choi became a familiar name in food, the craft was built through a straightforward progression of school, training, and service work. Egg Harbor Township High School, Rutgers University, and the Institute of Culinary Education each added a layer of structure to her foundation. Her first industry work came in the back-and-forth of daily service, as a restaurant worker at restaurants and host at Heat Eaters, where timing, pacing, and floor awareness are learned in real time. That grounding shaped the range of roles Esther Choi holds now. As chef and partner of Ms. Yoo, co-host of 24 in 24: Last Chef Standing (since 2024), and host/competitor/food media personality of Food Network, she moves across restaurant and media work without changing the core of the brief.
