i. Biography
His food and wine work started at 19 in the kitchens of Restaurant Le Saintongeais and the Hotel Lancaster in Paris, then moved through Auberge du Soleil in Napa Valley and Chez Panisse Café in Berkeley, California. By 1984, Evan Goldstein had shifted into the dining room as a sommelier at Square One in San Francisco, and by 1987 he had earned Master Sommelier, the credential that framed a career in teaching taste.

The service floor is where Evan Goldstein’s trade took shape: sommelier at Square One in San Francisco, CA, from 1984, then director at Sterling Vineyards School of Service and Hospitality in Napa Valley, CA, from 1990–2002.
