In Vire-sur-Lot, France, the work at Château de Gaudou begins, as it must in Cahors, with fruit and place: Malbec first, then the quiet decisions that let the grape speak without being overdrawn by wood. Since 2000, Fabrice Durou has been the estate’s winemaker, guiding the wines with organic farming, close vineyard management, and a cellar hand light enough to preserve freshness, varietal clarity, and the supple texture of the terroir itself.

Unoaked and aged in egg-shaped concrete vats, it is recast as a fresh, fruit-forward, bistronomic wine — the sort of cuvée that seems designed to meet a plate halfway.
