Training at the University of Liverpool and Plumpton College gave Fergus Elias the technical base for work that depends on timing, palate, and repeatable decisions. That route suits cellar and vineyard work: less theory for display, more exactness in practice. By 2014, he had moved into a head of wine role at Balfour Winery, where one site became the place to build depth rather than breadth. The result was accumulation: more time with the same fruit, the same rooms, the same demands, and a clearer command of how those variables shape the wine.

Where They Are Now

At Balfour Winery in Staplehurst, the Head Winemaker role keeps Fergus Elias close to both continuity and detail. The value in that kind of position is familiarity earned over time, where each season adds to the next instead of resetting it. His work sits in the long view: less about turnover, more about reading a house style and holding it steady. English sparkling wine and Albariño define the current range, and the style is set out in direct terms: clean, fresh, precise, with brilliant clarity and distinctive fruit on the nose. Balance on the palate and a vibrant English acidity carry the wines through to a long finish. His vintage sparkling wines are single-vineyard wines shaped by clonal selection and small-batch winemaking, a method that keeps the work tight and deliberate, with each choice expected to earn its place. The discipline behind the wines is stated without ornament. “I taste it. No other way to do it.” That approach leaves no room for performance. The governing principle is even plainer: “It has to be the relationship between fruit and acid profile.” In that line, the structure of the wines is made clear: fruit provides shape, acid provides line, and the balance between them is where the work lands.

Fergus's signature wines include Balfour Brut Rosé, Leslie's Reserve Gold, Leslie's Reserve Sparkling Red, Leslie's Reserve Brut, and Leslie's Reserve Rosé.
