The Casa Bigote inheritance belongs to Bajo de Guía, Sanlúcar de Barrameda, Cádiz, Spain: a waterside trade shaped by seafood, daily supply, and a local public that understands its coast. Fernando Hermoso entered that continuity when he took over the family business with Francisco Hermoso (from 1970), working inside an existing house rather than building a concept from outside it. Kitchen leadership in a coastal restaurant is measured by consistency over years: product selection, timing, restraint, and the discipline to repeat what the house does best. By 1971, Fernando Hermoso had moved into that role; today, he is chef / head of kitchen (since 1971) and owner of the restaurant and its bar.
