Portrait of Florian Domberger
i. Biography
Bread work rewards the same habits that logistics does: timing, repetition, and control of movement. Florian Domberger came to Domberger Brot-Werk in Berlin through that training ground. His education at Melbourne, Australia, Eberswalde, and Björn Wiese sits alongside years in systems where delay and drift are expensive. Before bread became the main line of work, his professional life was built around process, coordination, and the management of things that have to arrive where they are needed. Military service sharpened that approach. As a soldier at West German army (1988–1990), Florian Domberger worked in a setting where order is not optional. He then moved into freight forwarding as manager at Father’s transportation logistics company (1990–1995), followed by an employee role at Kühne-Nagel in Hong Kong from 1995. Later, from 2004–2014, he worked in supply chain management at Johnson & Johnson in Switzerland. Across those roles, the work was less about display than about making complex chains hold together. That background now sits behind the bakery. Since 2015, Florian Domberger has been the founder of Domberger Brot-Werk, and since 2016 he has owned and operated it. He also serves part-time as lieutenant colonel and logistics commander in the reserves of German reserves. The through line is clear: in bread and in logistics, standards only mean something if they are repeatable.

Signature
Florian's signature dishes include Butterkuchen, Zimtschnecken, Vinschgerl, Schrippen, and Seelen. These are everyday bakery items, but they leave little room for looseness. Each depends on consistent handling and a baker’s ability to repeat a form without flattening its character. The range points to a practice grounded in staple breads and pastries rather than performance.
In Their Words “Food is kind of everything. It’s a source of conflicts, of love. It connects, it’s sharing, it differentiates. It’s absolutely underrated in Germany.”
