The Path
Technique was the first discipline in the kitchens of Pierre Koenig, Claude Bourguignon, and Pierre Hermé, where repetition and exacting standards were built into the work from the start. In that apprenticeship, Fréderic Bau was trained in the habits that define pastry at a professional level: precision, control, and the ability to keep structure under pressure. The result was not a narrow formation, but a foundation broad enough to hold both rigor and a modern sense of pleasure. At Valrhona, that foundation became a long-term framework. Since 1988, Fréderic Bau has been founder, école du Grand Chocolat and Creative Director of Valrhona, a combination that places making, teaching, and development in the same line of work.
