The Path
A food truck can be a testing ground for scale, speed, and identity. With Esa Flaca Rica, Fulvio Miranda built burgers around the flavors of his homeland, then carried that same reference point into restaurant service. Since 2021, Cantina del Tigre has extended the same logic in a more structured kitchen: familiar flavors, clearly stated, without losing immediacy.
The Work Today
At Cantina del Tigre in Panama City, since 2022, the kitchen has been centered on Traditional Panamanian dishes. Fulvio Miranda’s approach is direct: keep the food tied to origin, let the colors stay bold, and use presentation to sharpen—not obscure—the point of the plate. Ceviche and regional recipes sit at the core of that menu, treated as the main language rather than side notes. That kind of cooking reads as place-specific without becoming static. In Panama City, where style can drift toward either polish or nostalgia, Miranda keeps the line on Traditional Panamanian cuisine, especially ceviche, and gives it a contemporary frame. The result is a kitchen built on clarity: Panamanian flavors, modern presentation, and a menu that keeps its source material visible. Esa Flaca Rica remains part of the work as well. As founder, Miranda keeps the food truck connected to the same principle that runs through Cantina del Tigre: burgers inspired by the flavors of his homeland, translated through his own hand and kept close to their point of origin.
