The Path

Training at University of California, Davis (1973) gave Gary Eberle a formal frame for a craft already oriented toward technical rigor. In the same year, he moved from study into cellar work as co-founder and winemaker at Estrella River Winery & Vineyards in Paso Robles region, California (from 1973). That early role put him in direct contact with the demands of a growing wine region, where observation, adjustment, and trust in the grape became daily practice. In 1979, he founded Eberle Winery, and today he remains founder and winemaker and owner of Eberle Winery (since 1979). That continuity is part of the craft itself. It points to long repetition, to the slow accumulation of judgment that comes from making wine in the same place across harvests and vintages.

The Work Today

The title Enologist and General Partner keeps the emphasis on the technical art of winemaking: respecting terroir, growing grapes, and making age-worthy wines. The work is specific, but the aim is broader than process alone. It is the steady translation of a site into bottle, with each decision tied back to what the vineyard can support. Cabernet Sauvignon from Paso Robles is the clearest through-line in Gary Eberle’s work, chosen with intent and carried forward as a defining focus. Syrah in the United States is also part of his specialty, giving the record more range without shifting the center. Across both grapes, the priorities remain structure, balance, and depth that develops over time.

His career also includes Syrah in the United States, a specialty that broadens the picture of his work without diminishing the centrality of Cabernet Sauvignon to his reputation.
