Sculpture informed the way George Germon built food at Al Forno: with attention to form, balance, and the kind of restraint that lets a dish hold together under heat. In Providence, Rhode Island, that approach found a durable setting when he co-founded Al Forno in 1980 with Johanne Killeen. The kitchen language they developed was local without being parochial and Italian without imitation, grounded in Rhode Island ingredients and traditional recipes while pushing charcoal-grilled pizza to extreme heat, up to 1200 degrees. Even the method had the plain logic of a working kitchen: “I thought it would stick, so I rolled the dough first in olive oil.”

At Al Forno, the grilled pizza technique associated with George Germon became a study in controlled heat and texture, with charcoal doing the work of definition. The food’s structure came from the meeting of Rhode Island produce and Italian forms, a combination that made the menu feel rooted to place rather than imported. That regional grounding gave the restaurant a clear register: attentive to what Providence offered, and steady in the traditions that shaped the cooking. The move from sculpture to stove showed up in the way the work was handled: patiently, materially, and in partnership. Dough, oil, fire, and timing were not treated as abstractions but as parts of a process that had to be tested and repeated until it held. The line attached to the pizza method points to that practical curiosity, where a small adjustment became part of the restaurant’s larger identity.
