The Climb
Classical French training was the starting point at Les Trois Marches, Versailles, where George Mavrothalassitis learned the kind of rigor that later met a more sunlit pantry in Hawaii. That shift matters in the work: the technique stayed disciplined, but the ingredients and register moved toward the Pacific. Beginning in 1988 at La Mer at the Halekulani Hotel in Honolulu, Hawaii, the sea became a central reference point in the kitchen. By 1995–1998, the scale had widened through leadership roles at Four Seasons Hotel Maui, Hawaii and Seasons Restaurant in Maui, Hawaii, where the work continued to tighten around precision, local context, and a clearer sense of place. Building a restaurant added another layer to that career. In 2007–2007, George Mavrothalassitis founded Cassis in Honolulu, Hawaii, a move that extended a path already defined by movement, exacting standards, and independent authorship. Chef Mavro, founded and led by George Mavrothalassitis since 1998, remains the clearest expression of that training and of the Hawaiian setting that shaped it.

At Chef Mavro in Honolulu, George Mavrothalassitis works in a deliberate seasonal rhythm, with the menu built to keep pace with what is available and best. As a founding member of Hawaii Regional Cuisine, he is linked to a wider effort to define island cooking on its own terms rather than by imported default.
