Gil Fernandes

Gil Fernandes is the chef leading the kitchen at Fortaleza do Guincho in Cascais, where he assumed leadership in 2018 after joining the restaurant in 2015 as sous chef. He trained at Escola de Hotelaria e Turismo de Estoril from age 14, then worked at De Librije under Jonnie Boer and at Vila Joya’s Ocean restaurant before moving to Fortaleza do Guincho. Under his leadership, the restaurant has continued to hold its Michelin-starred status, and he has become closely associated with a Portuguese, coastal, seasonal approach to cuisine.
