The National Diploma of Oenologist (DNO) gave Guillaume Roffiaen the technical base that still underpins the work: exactitude, process control, and a working command of Champagne. At Champagne Feuillatte (2000–2001), he began as winery rookie, a role that put him close to the routines of the house and into the habits that define clean cellar work—attention, repetition, and precision. Those habits were tested and extended at Drappier (2003–2014), where Roffiaen served as Chief Winemaker. The position placed him inside the daily decisions that determine style, consistency, and identity over time. When he joined Champagne Nicolas Feuillatte as director of oenology and quality (2014–2017), the brief shifted toward oversight and continuity, with technical judgment carrying as much weight as repetition. He then moved into the role of Chief Winemaker at Champagne Nicolas Feuillatte (from 2017), continuing the same measured approach under a house that depends on consistency.

Where They Are Now

Since 2017, Roffiaen has been Chief Winemaker at Champagne Nicolas Feuillatte in Chouilly, France. He states the role plainly: “I am the Chief Winemaker of Champagne Nicolas Feuillatte.” The directness of that phrasing matches a working style built on clarity rather than ornament. The scope is equally direct. “With my team, I oversee the entire Champagne making process, from vine to wine.” That is the work in one line: a chain of decisions that begins in the vineyard and carries through every stage of production, with no break in responsibility between the source and the finished wine. “We work tirelessly to create exceptional cuvées and a constant quest for perfection is instilled in each of the House’s champagnes.” The emphasis is on repetition and standard, not slogan. For Roffiaen, quality is maintained through continued attention, not announced once and assumed. His stated belief about Champagne also sets a practical tone for the category. If the wine is exceptional, it should not be reserved for special occasions. That places the craft in regular life as well as formal service.
