At Château Saint-Vincent in Gilly, Guy Rolaz works as both winemaker and owner, which puts vineyard management and cellar work inside the same set of decisions. In that arrangement, the making of the wines stays tied to Chasselas, and the estate’s identity is carried through harvest timing, viticulture, and the choices made from one season to the next. The work is annual, but it accumulates; each vintage sits beside the last, and the memory of previous years remains part of the process. The signature work is Château Saint-Vincent Grand Cru, described as a powerful, mineral Chasselas with freshness and body on the palate. That combination gives the wine its shape. Its very light bitter finish extends the line of the wine and gives it definition, so the palate ends with structure rather than only brightness. The result points to a method built on precision, texture, and restraint. That bottle also shows the terms on which the estate is worked: local grape, hand harvest, reasoned agriculture, and a winemaker who has measured the same ground over decades.
