Hans van Wolde is a Dutch chef from Rotterdam who opened Brut172 in Reijmerstok, Limburg, after previously running Beluga and selling it in 2019. Brut172 opened in March 2020 in a renovated farmhouse, and Michelin awarded the restaurant two stars in 2021. In 2026, Gault&Millau named him Chef of the Year for Brut172.
