Haruhiko Yamamoto is a Tokyo-born chef and proprietor of Nihonryōri Seizan, a 2-Michelin-starred kaiseki restaurant in Minato City, Tokyo, which he opened in April 2011 at age 31. Born September 5, 1979, in Ashikaga City, Tochigi Prefecture, Yamamoto trained at Ecole Tsuji Tokyo and apprenticed under kaiseki master Seiji Takada at Takada Yassho in Gifu Prefecture before establishing Seizan. His culinary philosophy emphasizes seasonal ingredients, open-kitchen performance dining, and the delicate balance of flavors that define traditional kaiseki cuisine.
