Kaiseki practice is built on restraint, seasonality, and rule-bound simplicity; Hideki Ishikawa, born in Niigata prefecture, built his name inside that discipline. “The veal is tender and it has a great colour. This is something I want to accentuate in my first recipe.” Hideki has said.
