i. Biography
The Path
Technique came first in Hiro Sone’s training: Tsuji Cooking School gave him the base, and Spago Hollywood gave that base a public test. From 1983, under Wolfgang Puck in Hollywood, California, the work sat in the pressure of a serious kitchen early enough to shape pace, discipline, and standards. At Terra, Hiro Sone built a long chef-owner run from 1988 onward, the kind of consistency that reads as craft discipline rather than novelty. He later carried that same owner-chef responsibility to Ame in San Francisco from 2005 to 2016, before returning to Terra in St. Helena, Napa Valley, where his name remains attached to the room’s exacting standard.
