i. Biography
Hiroyasu Kayama is the owner-bartender of Bar Benfiddich in Nishi-Shinjuku, Tokyo, a small cocktail bar he opened in 2013. Sources describe him as a "master mixologist" whose bar has been repeatedly recognized in The World’s 50 Best Bars and Asia’s 50 Best Bars rankings. He began his bartending career at age 20 after working at a hotel, later becoming head bartender at Amber before founding his own bar.
