In whisky, the first step in Ian Palmer’s career came in 1978, when he became Operations Manager at Invergordon Distillery. That role placed him inside the daily mechanics of production, where process and consistency define the work. From there, he moved into wider responsibility as Group Distilling Manager at Whyte & Mackay, shifting from a single site to oversight across distilling activity. The next stage took him to InchDairnie Distillery, where he became Managing Director until 2024, and later chairman at InchDairnie Distillery. Across those roles, the pattern is one of scale: operations, then management, then leadership tied to the building and direction of a distillery.

Where They Are Now

The line from one role to the next is clear: managing production inside one distillery, overseeing distilling at a broader level, then helping shape a Glenrothes distillery around materials, method and maturation. At InchDairnie Distillery, Palmer’s work sits where practical experience meets defined intent. That emphasis frames the distillery as more than a site of output. Ian's signature wines include RyeLaw, KinGlassie Double Matured, KinGlassie Raw, Scotch Sour Mash, and Pot Still whisky. Taken together, they show the range associated with his work: names that sit within whisky’s technical and stylistic vocabulary, and within a production profile shaped by method as much as naming.
