Ignacio Carmona

Ignacio Carmona is a Japanese-cuisine chef associated with the Ikigai restaurant brand, including Ikigai in Mexico City and a later expansion to Miami. A 2023 profile says he spent 24 years at the Japanese restaurant in the former Hotel Nikko in Mexico City, where he worked in the kitchen for six years before moving to the sushi bar, and later opened his own restaurant, Ikigai. Coverage of the Miami opening describes him as chef and partner and notes more than 25 years of training in Japanese cuisine, including extensive training in Japan.
