The Path
The discipline behind Irma Galvan’s work was shaped early in the classrooms and routines of Our Lady of Guadalupe School, Marshall Junior High, and Jefferson Davis High School. In 1989, Galvan moved into the role that has defined her career since: owner / chef-owner of Irma's Original (since 1989).
The Work Today
At Irma's Original, continuity is the method. Since 1989, Irma Galvan has worked as chef-owner, and the restaurant’s value lies in repetition done well: a kitchen organized around habit, memory, and the simple requirement of feeding people with care. Galvan has described that approach in domestic terms, which is fitting given the way the work reads as an extension of home. The pace of service, the repetition of prep, and the expectation that each plate should carry warmth all point to a practice grounded less in display than in responsibility. As she has said, “Every day I feel like I'm cooking for my family.” That sense of responsibility gives the work its shape. Galvan’s cooking is presented as continuity rather than reinvention, rooted in the daily obligations that once made her a caretaker within her own household. The kitchen carries that history forward. Through Irma's Original, the act of serving becomes a familiar form of care, one that gives the restaurant its steady emotional register without leaning on spectacle.
Signature
The signature dishes associated with Irma Galvan are built on familiarity and abundance. Irma’s famous chicken mole is one of the clearest markers of her cooking, a dish linked to depth, patience, and layered flavor. Galvan’s signature fresh-fruit, bottomless lemonade adds a different register: direct, generous, and built for the table rather than the showcase. Enchiladas Mexicanas with queso fresco round out the group, bringing a clear sense of comfort and identity. Taken together, these offerings describe a kitchen where the standard is not novelty for its own sake, but welcome, consistency, and the feeling of being fed well.
In Their Words “Every day I feel like I'm cooking for my family.” “I was like a mother to my two brothers and my sister. I cooked for them.” Those lines explain the structure underneath the work. The kitchen is not separate from Galvan’s life; it extends from it. Before Irma's Original gave her cooking a public face, she was already practicing the same kind of care at home. That domestic role was not a side note to her career. It formed the basis of it: food as responsibility, memory, and daily practice.
