Lead bartending at The Cosmopolitan gave Jennifer Yim a floor for pace, standards, and repetition, the kind of post that rewards precision as much as judgment. The work there points to a practice built on attentive service, polished execution, and exacting control, with craft and presence carrying equal weight. Today, Jennifer is trainer & creator of the american dream game of ZingTrain (since 2022) and co-founder of Spirit & Seoul (since 2024), extending that same mix of hospitality, education, and cultural storytelling into new formats.

Seasonality sits at the center of the work, with Korean fruits, vegetables, teas, and dishes used as the frame for menus that stay tied to place and time rather than a fixed style. The technique is equally specific: clarification, force-carbonation, nitro-charging, and switching give the drinks their structure, while also allowing texture shifts and controlled surprises without losing clarity. Technique, in Jennifer’s hands, is part of meaning rather than a separate layer added afterward. That approach keeps each drink legible from concept to pour, with every element doing a defined job in the final balance.

Signature

Jennifer's signature dishes include The American Dream Game and strawberry-miso soda. The range here is instructive: one reads as conceptual in name and framing, while the other turns on a direct flavor relationship, with strawberry and miso meeting in a profile that holds sweet, tart, and savory together.
